Sweet Corn and Cilantro Cream Sauce

  1. Melt butter in large saucepan over medium heat.
  2. Add garlic, diced onion, and 75% of corn kernels. Saute until soft, about 4-5 minutes.
  3. Add heavy cream and water, bring to low simmer. Cover, continue simmering 8-10 minutes to bring out flavor of corn.
  4. Remove from heat, add to blender, blend until smooth, covering to avoid hot liquid from splashing.
  5. Pour liquid through fine mesh strainer and back to saucepan over medium heat.
  6. Add remaining corn kernels and American cheese, stirring until corn has cooked through and cheese has melted.
  7. Remove from heat. Add cilantro, lime juice, and basil, stirring to combine. Season to taste with salt and pepper.
