Texas Style BBQ Sauce

INGREDIENTS
- 2 Tbsp. Bongards® Salted Butter
- 1 shallot, minced
- 2 garlic cloves, minced
- 6 oz. tomato paste
- 2 Tbsp. flour
- 16 oz. whole milk
- 6 oz. Bongards® Yellow Super Melt™ American Loaf, shredded
- 2 Tbsp. dijon mustard
- 2 Tbsp. worcestershire sauce
- 2 Tbsp. apple cider vinegar
- 3 oz. brown sugar
- 1 Tbsp. chili powder
- 2 tsp cracked black pepper
- 2 tsp. celery salt
- 1 tsp. ground coriander
PREPARATION
- Melt butter in large sauce pan over medium heat.
- Add shallot and garlic, saute for 1-2 minutes until fragrant and translucent.
- Add tomato paste and stir while cooking 1-2 minutes.
- Add flour to make a roux. Cook while stirring 1-2 minutes.
- Add in milk while rapidly stirring to prevent lumps, then bring to simmer for 3-4 minutes.
- Slowly add in cheese while stirring until cheese has completely melted and smooth.
- Remove from heat and pour into blender.
- In small bowl, stir together dijon mustard, worcestershire sauce, apple cider vinegar, brown sugar, chili powder, black pepper, celery salt, and ground coriander.
- Slowly add mustard mixture to cheese sauce while the blender is on high speed. Once fully incorporated, pour into storage container and refrigerate until ready to use.
