King Hawaiian Burger

But it is the harmonious marriage of suprising flavors that truly sets this burger apart – from the sweet and juicy pineapple to the spicy pineapple mayo to the tangy pickled red onions. INGREDIENTS
- 4 oz. ground beef
- 2 oz. bacon, finely diced
- 2 oz. SPAM®, finely diced
- 1 King’s Hawaiian® hamburger bun
- 2-3 leaves bib lettuce
- 2 pineapple rings
- 3 Tbsp. spicy pineapple mayo (see recipe below)
- 1 Tbsp. pickled onions (see recipe below)
- 2 slices Bongards® Pasteurized Blended Pepper Jack Cheese
PREPARATION
- Make spicy pineapple mayo and pickled onions up to a day ahead of time.
- Dice bacon and SPAM very finely and add to beef, forming an 8 oz. patty. Set aside in fridge while you prep other ingredients.
- Cut pineapple into 2 rings, then sear or grill over medium-high heat until lightly carmelized.
- Season burger patty on each side with salt, pepper, and garlic, then sear burger for 3-4 minutes per side.
- Griddle bun.
- Top burger with pepper jack cheese to melt.
- Assembly: Bottom bun spread with pineapple mayo, bib lettuce, burger patty, pickled onions, pineapple rings, and top bun spread with pineapple mayo.

Spicy Pineapple Mayo
INGREDIENTS
- 1/2 C. mayonnaise
- 1/4 C. crushed pineapple
- 1 Tbsp. pineapple juice (reserved from crushed pineapple)
- 1/4 tsp. sriracha
- 1 tsp. sugar
- Pinch of salt and pepper
PREPARATION
- Add all ingredients to a bowl and whisk to combine.
- Cover and refrigerate for 30 minutes prior to serving.
- Store in an airtight container for up to two weeks.
Pickled Onions
INGREDIENTS
- 1 red onion, peeled and thinly sliced
- 1/3 C. white vinegar
- 2/3 C. water
- 1/2 tsp. coarse kosher salt
- 1/2 tsp. sugar
- 2 garlic cloves, smashed
PREPARATION
- Place the onions in a jar and add vinegar (until jar is about 1/3 full).
- Fill the rest of the jar with water.
- Add salt and sugar; shake a few times to combine.
- Let rest in fridge for 30-60 minutes.
- Can be kept in the fridge up to 5-7 days.
